The Ultimate Avocado Toast with Perfectly Poached Eggs

Ingredients

  • 2 thick slices sourdough
  • 1 ripe avocado
  • 2 fresh eggs
  • Lemon juice, chilli flakes, sea salt
  • Microgreens to serve

Method

Toast sourdough until golden. Mash avocado with lemon, salt and pepper. Poach eggs in simmering water with a splash of vinegar for 3 minutes. Spread avocado on toast, top with eggs and chilli flakes.
