Cloud-Like Fluffy Pancakes with Maple Butter Syrup

These are not just any pancakes. Tall, cloud-soft, melt-in-your-mouth pancakes that will ruin every diner stack — in the best possible way.

Ingredients

  • 200g plain flour
  • 2 tsp baking powder, 1 tsp baking soda
  • 300ml buttermilk
  • 2 eggs separated
  • 50g melted butter

Method

Whisk dry ingredients. Mix wet ingredients separately. Whip egg whites to soft peaks. Fold wet into dry, then fold in whites. Cook on medium-low heat until bubbles form, then flip.
