Cloud-Like Fluffy Pancakes with Maple Butter Syrup

Ingredients
- 200g plain flour
- 2 tsp baking powder, 1 tsp baking soda
- 300ml buttermilk
- 2 eggs separated
- 50g melted butter
Method
Whisk dry ingredients. Mix wet ingredients separately. Whip egg whites to soft peaks. Fold wet into dry, then fold in whites. Cook on medium-low heat until bubbles form, then flip.
