Classic Caesar Salad with Homemade Dressing and Croutons

A true Caesar salad — crisp romaine, salty parmesan, crunchy croutons, and that iconic umami-rich dressing. Make it from scratch once and you will never reach for a bottle again.

Ingredients

  • 2 heads romaine lettuce
  • 80g parmesan shaved
  • 4 anchovy fillets
  • 1 egg yolk, 2 tbsp lemon juice, 1 tsp Dijon
  • 100ml olive oil
  • Thick bread for croutons

Method

Make croutons at 200C for 15 mins. Pound anchovies and garlic to a paste, whisk in yolk, lemon and mustard, slowly drizzle in oil. Toss romaine with dressing, top with parmesan and croutons.
