Classic Italian Tiramisu — The Only Recipe You Will Ever Need

Tiramisu means lift me up — and this version will do exactly that. Clouds of mascarpone cream, espresso-soaked ladyfingers, and a generous dusting of bitter cocoa.

Ingredients

  • 500g mascarpone
  • 6 eggs separated
  • 150g caster sugar
  • 300ml strong espresso cooled
  • 3 tbsp Marsala
  • 250g Savoiardi ladyfingers
  • Good cocoa powder

Method

Whisk yolks and sugar until pale. Beat in mascarpone. Fold in stiff egg whites. Dip ladyfingers in espresso 2 seconds each side. Layer with cream. Refrigerate 4 hours. Dust heavily with cocoa.
