Indulgent Brioche French Toast with Caramelised Berries

Using thick-cut brioche takes French toast from weekday breakfast to weekend indulgence. The caramelised berries take 5 minutes and transform the dish completely.

Ingredients

  • 6 thick slices brioche
  • 4 egg yolks, 200ml cream, 2 tbsp sugar, vanilla
  • 300g mixed berries, 3 tbsp sugar, 1 tbsp butter

Method

Whisk custard ingredients. Soak brioche 2 minutes each side. Fry in butter until deep golden. For berries, caramelise sugar in butter, add berries and lemon juice, toss 2 minutes. Serve over toast.
