Rich and Fragrant Butter Chicken Curry from Scratch

Butter chicken — murgh makhani — is arguably the world’s most beloved curry. This from-scratch version with overnight marinated chicken is worth every minute.

Ingredients

  • 800g chicken thighs
  • 150ml yoghurt, spices for marinade
  • 400g tomatoes, 2 onions, garlic, ginger
  • 150ml cream, 3 tbsp butter

Method

Marinate chicken overnight in yoghurt and spices. Grill until charred. Cook onions 20 minutes until golden. Add garlic, ginger, spices, tomatoes. Blend smooth. Add cream and chicken. Simmer 15 minutes. Finish with cold butter.
