The Perfect Moist Banana Bread with Brown Butter and Walnuts

Brown butter adds a nutty caramel depth that regular melted butter cannot match. Use the blackest bananas you can find — the blacker the better.

Ingredients

  • 3 very ripe bananas
  • 115g butter browned
  • 150g dark brown sugar
  • 2 eggs, 1 tsp vanilla
  • 200g flour, 1 tsp baking soda, cinnamon
  • 80g walnuts

Method

Brown butter and cool. Whisk with sugar. Beat in eggs and vanilla. Stir in mashed bananas. Fold in flour, baking soda, cinnamon. Fold in walnuts. Bake at 175C for 55-65 minutes.
